The food, over the centuries, has always played a vital role in the history of the city soaking in a tight relationship with the land, its economy, the structuring of the places, the articulation of the functions, the design of the built and open spaces, the flow of daily life and ritual of collective events, the distinction between cohabitation and groups, ethnic groups, religions, the meaning and symbolism of the relationship between social classes, the intimacy of the dinner table and sharing of extraordinary episodes in peacetime and war.

His links with the social life in places has also produced its own cultural value that is now recognized as historic heritage and that brings into play other stories, in their relationship with the sacred and with the imaginary, in its widespread need and its specifications local and multicultural. From ancient times, in the Middle Ages and in the modern age to contemporary age, the dynamics and processes related to the production, preparation, exchange, distribution, consumption, and the architecture of the spaces that host them, the techniques and standards, the connections with the health and well-being, its preparation and representation that they have been processed, customs, traditions, fashions, which generated awareness and the changes that resulted, they stage ties many of the food with urban life, offering insights to enhance its specific meaning in the history of the city. ll AISU seminar held June 6, 2014 at the University of Roma Tre has introduced some of the themes of the conference as a guideline, suggesting also openings towards sociology and stress stimulants in the field of contemporary political history.

In the year 2015, which will also be at the Milan International Expo Center, the conference AISU organized by the University of Padua promotes an extensive comparison between cities, places, values, numbers and stories, which show again once more, the urban structure in all its complexity
